Inspired by Fontiana, an alpine cheese of Northern Italy, this Australian raw milk cheese is approachable but flavoursome.  The buttery flavour is balanced by a delicate herbaceous taste and a hint of nuttiness.
 
The 4kg wheels are washed regularly during the aging to keep a smooth and gentle rind.
